Countdown to Christmas - Day 8

It's been snowing all day here. Cold and snow mean I make soup for supper. There is one particular soup that my both my boys will gobble up......Vegetable Cheese Soup. I found this recipe a long time ago, tweaked it a little and now it's one of our favorites. And the best part is I always have all the ingredients on hand and it doesn't take long to make.

Vegetable Cheese Soup

2 T. finely chopped onion
2 T. butter or margarine
3 T. flour
1/2 tsp. salt
1/8 tsp. pepper
2 C milk
8 oz. Velveeta cheese
2 chicken bouillon cubes
1 1/2 C water
1 16 oz. pkg. frozen veggies(we like broccoli, cauliflower & carrot mix)

In a large pan cook onions in buter until tender. Stir in flour, salt, and pepper until well blended. Add milk and cook until thickened, stirring constantly. Add cheese and stir until melted. Remove from heat. In a separate pan dissolve bouillon in water and bring to a boil. Add veggies and cook until done. Do not drain. Add veggies to cheese mixture.

Another thing that cold and snow mean is hunkering down in our home and having some good ol' family time. Tonight we popped popcorn, snuggled under a quilt and watched Winter Wipeout! This time the boys made it about half way through the show before they were setting up their own obstacle course and leaping off of the bed! :)
